Microcrystalline cellulose (MCC) is a linear polysaccharide primarily composed of β-1,4-glucosidically linked molecules. It is a white, odorless, and tasteless crystalline powder consisting of extremely fine, short rod-shaped or powdery porous particles that are free-flowing and formed from natural cellulose hydrolyzed to its limiting degree of polymerization (LODP) by dilute acid hydrolysis.

Characteristics of Microcrystalline Cellulose:

Microcrystalline cellulose particles typically range in size from 20 to 80 μm, with a LODP of 15 to 375. It is non-fibrous but extremely free-flowing. It is insoluble in water, dilute acids, organic solvents, and oils, but partially dissolves and swells in dilute alkaline solutions. It exhibits high reactivity during carboxymethylation, acetylation, and esterification processes. Due to its unique properties such as low degree of polymerization and large specific surface area, microcrystalline cellulose is widely used in the pharmaceutical, food, and cosmetic industries.

Microcrystalline cellulose, especially during high-temperature processing, can stabilize foams and emulsions; form gels with an ointment-like texture; improve the heat resistance of pectin and starch gels; enhance adhesion; replace fats and oils; and control ice crystal growth. The reason microcrystalline cellulose can stabilize emulsions and foams is that it adsorbs onto the interface and strengthens the interfacial film. Microcrystalline cellulose is a common ingredient in low-fat ice cream and other frozen dessert products.
